Blood orange, Cherry and Carob Smoothie

This recipe was a total accident this morning. I was so surprised by it’s deliciousness that I was inspired to write it down in a blog to document it and share it. It’s a remix of Kelly Brogan’s Brain Smoothie, adapting her recipe to what ingredients I had in the kitchen this morning. Frozen cherries are a new addition to my freezer repertoire - they taste excellent in smoothies. Lowe and Co organic grocer in Athlone provided the gorgeous blood oranges, and my eggs come from Shannon Eco farm

Blood orange, Cherry and Carob Smoothie

Serves 1

2 cups frozen cherries

1 tbsp coconut oil

2 raw eggs

zest and juice of half a blood orange

2 tbsp carob powder (ground cacao would also work well here)

Blend all ingredients together with some kind of neutral tasting liquid (I used some hot water from the kettle to ease the freeze on the cherries) and enjoy!
